It’s not porridge for breakfast!

In the place of porridge, how about serving this to your children to start off the day. It has a similar consistency, is made from 100% raw ingrediants, it’s gluten and wheat free and is totally scrumptious!

I’ll add a picture when I make it next – I ate it this batch straight away!

1 iceberg lettuce,
10 dates de-stoned,
1/2 the meat from a mature coconut,
Blend the above in a high powered blender until smooth.
Serve with a glass of the coconut water.

I scoffed the lot, but I guess you might say that it serves two! …. Enjoy :-)

    do you have any tips on getting the meat out of a coconut? I have 2 kids who might like to try this, but last time I had coconut it took ages to get into it. I have to be at work for 8.15am, so I don’t have a great deal of time in the morning to provide the kids with breakfast

    i minced it all with a knife super fast and its the most awesome coconut salad if u dont have time to make it for breakfast its good to make any time you could add other things and serve it at a party but this is my second day eating it for breakfast im eating it now and highly recomend it! its an ace recipe thank u stuart<33

    Thanks for your kind comment. I think I’ll try it myself as a salad.
    I love coconut! although I can’t have too much of it as I need to follow a
    low fat diet (cutting right down on fat foods pulled me out of fatigue).
